Found an idea on Pinterest and tweaked it a little. These were a hit! My very picky son ate three (of course dipped in ranch dressing).
Recipe:
2 medium zucchini grated
1 cup Panko bread crumbs
1/2 cup Parmesan cheese
1 egg
Salt and pepper to taste
After you have grated the zucchini, blot with paper towels to get off excess water. In a medium sized bowl, put zucchini, bread crumbs, cheese, egg, and salt and pepper. Mix until it is a good consistency to make patties. May need to adjust cheese or bread crumbs accordingly. Spray a skillet with non-stick cooking spray and turn the eye on medium heat. Place patties in the skillet and flip until golden brown.

Happy Father's Day
Made pictures of each grandchild holding a different letter to spell Poppy as a gift for my Dad. Then took pictures of my child for my father-in-law. Great gift idea for those dads who have everything.
